                             The Macro-Nut in the Bahamas


Approximately 30 years ago, when I stayed in the Bahamas for 3 months or so, my friend Cathie typed up recipes which we put together as 'A week in the life of a Macro-Nut'.  So it seems appropriate now I am here again cooking for her that my blog is called 'The Adventures of a Macro-Nut'.

Measurements are included in these desserts as a guide! :


Bahamian coconut cacao ‘cake’



Bahamian coconut cacao ‘cake’:

base: walnuts/ coconut flour/ medjool dates
...ground in Cuisinart till sticky
press into flan dish

top: grind cacao powder from nibs (4oz)
add 4 avocados
⅔ cup coconut oil (warm)
¼ cup maple syrup
vanilla to taste
(can also add almond pulp from making milk)
blend in Cuisinart 
set in fridge
decorate with chopped walnuts and coconut strands






Bahamian lemon cheesecake




Base:
1/2 cup freshly ground flax seeds
2 tbsp coconut flour
pinch salt
approx 2 tbsp rice syrup
.. to just bind above

Top:
2 cups cashews (soaked)
juice of 1and1/2 juicey lemons
2/3 cup coconut oil (warm)
1/4 cup maple syrup
vanilla
opt. 2 tbsp cashew cheese
...or cashew yoghurt
(homemade of course)


... then put your feet up




Constant movement of ocean

Deep stillness of rock where I lie

And hardly a cloud in the sky

And I close my eyes
To feel a different 'seeing'
Warm wind permeating every cell
Sunshine smiles all through
And the music of the waves
Helping me renew
Reconnecting to nature
In a paradise right here
When I remember this
Everything is clear


Apple and Coconut Kanten



2 cups apple juice
Big spoonful agar agar
Tiny pinch sea salt
Vanilla powder or drops
Pinch cardamon powder
When agar has dissolved add creamed coconut (about 1/5 packet)
Let cool for a few mins then blend with a big squeeze of lemon juice and pour into dishes
Decorate with fruit eg raspberries.. or coconut strands


Guava Whip



2 cups water
1 tbsp agar agar
vanilla to taste
tiny pinch salt
1/3 cup coconut sugar
simmer above ingredients
till agar is dissolved
add 1/4 packet creamed coconut
while hot

let cool slightly then whip in blender with
1 1/2 cups prepared guava, and
juice of half a lime

pour into glasses and set


you could add an optional sprinkle:
ground flax, coconut flour, and coconut sugar
ratio about 60/25/15
nice with a pinch of dried ginger



and moor!!!!

Macro-Nut

Bahamian coconut cacao ‘cake’



Bahamian coconut cacao ‘cake’:

base: walnuts/ coconut flour/ medjool dates
...ground in food processor till sticky
press into flan dish

top: grind cacao powder from nibs (4oz)

blend in food processor 
set in fridge
decorate with chopped walnuts and coconut strands

... then share with friends!!!




In a land where coconuts grow and coconut butter is called oil because at room temperature it is liquid, it makes sense to me to make desserts that set in the fridge as most foods are kept in a refrigerator.  I hope to return there before too long and experiment more with local foods. Meanwhile enjoy... and share as they are very 'rich'... ...more recipes will follow soon.

Sprouted Buckwheat Pancakes and picnic 'bread'


Buckwheat pancakes savoury

Soaked Buckwheat (at least overnight)
then rinsed and add enough water to just
about cover (not too much)
Ginger
Turmeric
Coriander
Cumin
Tamari or pinch seasalt
2 tsp kuzu (or rice flour)
Blend then fry in coconut oil

serving ideas:
great as a 'wrap'
with pesto or hummous and salad... 
or butternut squash puree
or scrambled tofu
or thyme/sumac/olive oil/herb salt





Buckwheat pancakes sweet


Approx 2 cups buckwheat: 

Season to taste with other ingredients

Soaked Buckwheat (at least overnight) 
then rinsed and add enough water to just
about cover (not too much)
Pinch seasalt
2 tsp kuzu (or rice flour)

Blend then fry in coconut oil

serving ideas: 
with maple syrup and or vanilla cashew cream
or rice syrup with chopped pecans and cardamon
or coconut sugar and lemon juice

Buckwheat picnic 'bread'


Soaked Buckwheat...
... (at least overnight) then rinsed
Onion
Garlic
Ginger
Turmeric
Coriander
Cumin
Olive oil
Tamari

For approx 2 cups buckwheat:
enough water to just about cover
(not too much) 
1 onion
1 clove garlic
1tsp olive oil
Season to taste with other ingredients

Blend briefly then bake for 20-30 mins until golden (about 180 deg)

serving ideas:
As picnic food to replace bread
With tofu 'cheese' bake
With tahini miso spread
 Nice Rice Creams  


Soft rice is so comforting... plain is lovely... but sometimes adding a few other things can be great!  Play with the combinations and try them out on the kids too!
You'll need a good blender... I love my Vitamix (thank you dear Brin).



Bahamian rice-cream




For approx 1/2 cup of soft cooked organic brown rice
1 banana
1/2 cup homemade almond milk* or coconut milk
Pinch vanilla
Pinch cardamon
1 tsp rice syrup (not if use coconut milk)


Blend!  Even nicer with chopped pecan garnish.



Spirulina rice-cream





For approx 1/2 cup of soft cooked organic brown rice
1/2 cup homemade almond milk* or coconut milk
Pinch vanilla ...and or...
Pinch cardamon
1 tsp rice or maple syrup (or banana)
1 tsp spirulina (or more if you like!!!)


Blend!  


Cacao rice-cream




For approx 1/2 cup of soft cooked organic brown rice
1/2 cup homemade almond milk* or coconut milk
Good pinch vanilla
1 tsp rice or maple syrup (or banana)
1 tsp cacao (or more if you like!!!)



You get the idea... mix and match!  I tend not to mix fruit except banana with the carbs. Make the sweet taste to suit.


*To make almond milk just soak a handful of nuts overnight, tip away soaking water, add about 2 cups water and can add a tiny pinch seasalt then whiz, then strain if you don't have a very good blender.
