Spring water
Leek
Courgette/ Zuccini
Nettles… just a big bunch of young top leaves
Herbamare
Alfalfa
Borage flowers
Bring the water to a boil add chopped leek
Simmer for 2 mins
Add courgette
Simmer for 2 more mins
Season with Herbamare or white miso
Add nettles… just stir inImmediately blend
Serve straight away to stay bright green
…decorated with alfalfa and borage
Watercress soup
Onion
Cooked millet
White miso or
Herbamare
Watercress
Boil spring water
Add chopped onion
Simmer for 4 mins
Add cooked millet till creamy
Season with miso or herbamare
Add chopped watercress and blend
Serve immediately

Onion
Garlic
Beetroot
Carrot
Butternut squash
Herbamare
Simmer onions then add other diced ingredients cook till soft then blend.
Serve with tahini to drizzle on plus alfalfa sprouts or similar to garnish
