Salads

I am hoping to find some wild watercress in a mountain stream on my walks. Meanwhile I am finding an abundance of wild sorrel and chickweed. There is some cleavers around too. And the dandelion leaves and nettles are very nearly ready… yummy!


                        Mostly Wild Salad







Wild sorrel
Chickweed
Plantain
Dandelion
Bretagne dulse
Carrot flowers
Lettuce


Serve with olive oil / ume su dressing

I choose wild or organic foods because every thing we buy has a chain reaction down through to the soil where our food is grown. In Macrobiotics I learnt a long time ago that our blood is only as strong as the soil the foods are grown in: So for our own health and for the planet... the earthworms and bees etc I feel it is our responsibility to look after this beautiful world!

Tahini Dressings are so yummy and simple to make they go with almost any salad … and even as a sauce for grains or vegetables.

All you need to make is organic tahini, something salty and something sour or pungent. And usually a little spring water to mix… the dressing is smoother if you add a little liquid at a time and stir well.  Ideas…

Tahini + Lemon juice + Tamari
Tahini + White miso + Tangerine juice
Tahini + Umeboshi vinegar
Tahini + Field bean miso + Ginger
Tahini + Apple cider vinegar + Dijon mustard + Herbamare
Tahini + Coconut oil + Lemon juice + Shoyu +Turmeric
Tahini + Pesto + Lemon juice
Tahini + Lime juice + White miso + Coriander
Tahini + White miso + Apple cider vinegar + Mint
Tahini + Avocado + Lemon juice + Basil + Umeboshi



Oil Dressings…  I find these best to make in a jam jar and shake… make sure the lid is on tightly!   I mostly use olive oil and a couple of other ingredients but you can substitute flax oil or sesame oil. If you add herbs then blend.
Ideas:
Olive oil + Umeboshi vinegar
Olive oil + Lemon juice + Tamari
Olive oil + White miso + Dijon mustard + Cider vinegar
Flax oil + Field bean miso + Chives
Olive oil + Himalayan Crystal salt + Basil +Lemon Juice





Dandelion and Wild Sorrel Salad

As this was made in France a sort of French dressing is appropriate…

Olive oil
Balsamic vinegar
Dijon mustard
Rice syrup or honey
Fine sea salt
Freshly ground black pepper
