About

Niccola

In my journey of striving for inner peace and balance, food has played an important role…creating concoctions…I started as a teenager … and still love to experiment… sweet alchemy ...having a sweet tooth! (but no longer from sugar).

Beginning in 1980 my quest for health by searching every natural food store led me to Macrobiotics. I have completed 3 levels of the Kushi Institute, the first two in London and the third in Becket, USA. Over the years I have assisted many, many wonderful Macrobiotic teachers, in UK and USA, both in their homes and with classes and camps. I was head cook at two Macrobiotic centers in USA in the mid ‘80’s (Bucks County and Miami) and was invited to the Bahamas to teach and later to cook for Shizuko Yamamoto and Patrick McCarthy's shiatsu workshop.

I also ran two Spring camps in Florida for approximately 200 people and catered for a wedding .. probably making the biggest couscous cake ever seen (shaped in a heart, covered with creamed coconut and adorned with a stem of tiny rosebuds). I have also cooked for various celebrities, and of course my son Alexander, an actor, who could well be a celebrity soon if not one already!

Changing my name to my middle name from Lesley has caused a certain amount of confusion, not only for my family and friends but also to myself ...Who am I?? So the journey continues, hopefully as much within as without, hopefully without as much as possible!

My recipes are written for those who have asked and for
those who might like to experiment. At the risk of being judged for being too something or the other, but in the attempt to open to the world that I have previously struggled to be in…  hoping now to become open and fearless to whatever grace and beauty and wisdom is offered… saying yes to what is… and so grateful for my journey thus far and all my amazing family of friends… and hoping to be of service… for peace, joy, fulfillment and health of individuals and the beautiful planet.
