Sprouted Buckwheat Pancakes etc

Inspired by Raw recipes of buckwheat crackers but not having a dehydrator I came up with these... see below the sweet pancakes for an updated recipe with chia seeds:

Blend then fry in coconut oil

serving ideas:

great as a 'wrap'
with pesto or hummous and salad...
or butternut squash puree
or scrambled tofu
or thyme/sumac/olive oil/herb salt

Buckwheat pancakes sweet

Season to taste with other ingredients

Soaked Buckwheat (at least overnight)

2 tsp kuzu (or one egg)

Blend then fry in coconut oil

serving ideas:

or rice syrup with chopped pecans and cardamon
or coconut sugar and lemon juice

This summer 2019 I experimented with chia to bind the pancakes:

Buckwheat and Chia Pancakes

1/2 cup Buckwheat (unroasted, soaked overnight and rinsed)
2 tsp chia seeds ground
Herb salt
Spices to taste

Blend together with a little water and fry in a pan wiped with coconut oil serve with sesame spread and salad, sauerkraut and avocado slices

Ground chia seeds help bind instead of eggs

Can also be for breakfast, if you like sweet replace herb  salt with sea salt and use cinnamon and or cardamon

Sesame Spread/Dip

1/2 cup of sesame seeds (soaked overnight and rinsed)

1/8 tsp Sumac
1/4 tsp Thyme
pinch sea salt

Blend with a little water until smooth

This can also be a base for any herbs like fresh basil, and great on rice pasta
